Log:

April 26 2023

I’m locked up with COVID at home. No better time to start a new mead.

Starting gravity approx 1.129, forgot to measure. Ferments until the yeast experiences Death By Alcohol.

April 27 2023

No activity after about 12 hours, I assume the rather old US-05 package died. Added the remaining 0.4g of the US-05 together with 2.9g of rehydrated Lalvin 71B to the must.

May 28 2023, stabilization and first racking

SG: 1.011, 16% ABV Stabilized with 2.5 g “Stabivit”

July 19 2023, bottling

1.011, 16% ABV

Tastes strongly of higher alcohols, this is going in the basement for a loooong time
